This is useful because monetite serves as a suitable matrix in macroporous scaffolds due to its higher phase stability and finer crystal morphology compared to its hydrous counterpart brushite. In this study the synergistic effect of NaCl and citric acid on the microstructural evolution of brushite cement was demonstrated and microporosity of macroporous monetite-rich cement blocks was minimized by a variable NaCl porogen size distribution approach. Initially, maximum packing ratio of various combinations of NaCl size groups in PEG were determined by their rheological analysis in a range between 57% and 69%. Statistical analysis revealed a positive correlation between the amounts of NaCl particles under 38 mu m and 212 mu m and the maximum packing ratio. Further broadening the size distributions of NaCl porogens with fine cement precursors was effective in increasing the solids packing ratio of cement blocks more than the maximum packing ratio for the porogens. This improvement in packing was accompanied by a reduction in microporosity despite the increase in micropore volume with ion induced monetite formation. The detrimental effect of the microporosity introduced to the structure during monetite formation was balanced for some size distributions and not so much for others, thereby resulting in a wide range of porosities and mechanical properties. Thus, the exponential dependence of mechanical properties on porosity and the mechanical properties of monetite-rich macroporous blocks at the theoretical zero-porosity were determined according to Rice's model. Zero-porosity extrapolations were much higher than those predicted for brushite cement, contrary to the common assumption that brushite is mechanically stronger than monetite.Article Citation - WoS: 10Citation - Scopus: 9Effect of Pretreatments on Microbial Growth and Sensory Properties of Dry-Salted Olives(International Association for Food Protection, 2014) Değirmencioğlu, Nurcan; Gürbüz, Ozan; Değirmencioğlu, Ali; Yıldız, SemanurThe effect of various washing solutions (acetic acid, lactic acid, and chlorine dioxide) and NaCl concentrations (2.5, 5.0, and 10.0%) on the stability of dry-salted olives (cultivars Gemlik and Edincik) during storage was studied. Vacuum-packed olives were stored at 4°C for 7 months and monitored for microbiological changes that occurred in the dry-salted olives during the drysalting process and for their stability during storage. Microbial populations were enumerated using pour plating (for aerobic plate counts) and spread plating (for counts of lactic acid bacteria and yeasts and molds). Aerobic plate counts were < 2.5 log CFU/g for olive samples washed in chlorine dioxide at all NaCl concentrations. At 4°C, the population of yeasts and molds increased steadily during the shelf life in Gemlik olive samples washed with all of the solutions, except chlorine dioxide, whereas yeast and mold counts in Edincik olives decreased depending on the increase in salt concentration. Therefore, different combinations of organic acids, NaCl, and vacuum packaging can be successfully used to control the growth of yeasts and molds in these olives. The combination of vacuum sealing (with a 10-ppm chlorine dioxide wash) and storage at 4°C was the most effective approach for controlling the growth of lactic acid bacteria and yeasts and molds. Members of the sensory panel considered saltiness to be appropriate at 2.5 and 5.0% NaCl. Softness and bitterness scores increased with reduced NaCl concentrations, but rancidity and hardness scores increased as NaCl concentration increased.Article Citation - WoS: 21Citation - Scopus: 24Isolation and Identification of Arcobacter Species From Environmental and Drinking Water Samples(Springer Verlag, 2016) Talay, Funda; Molva, Çelenk; Atabay, Halil İbrahimWater plays an important role in the transmission of Arcobacter spp. to animals and humans. The aim of this study was to isolate and characterize Arcobacter spp. from 115 different water samples (66 sewage, 25 rivers, 16 spring water, and 8 drinking water) in Izmir, Turkey. In total, 41 samples (35.7 %) were found positive for Arcobacter spp. by the genus-specific PCR. Arcobacter butzleri was detected in 39 out of 115 samples (33.9 %) including 24 sewage, 13 rivers, and 2 spring water. The remaining Arcobacter spp. (n = 2) isolates could not be identified by m-PCR and 16S rRNA gene sequencing. Based on the phenotypic characterization, most of the Arcobacter species (87.8 %) indicated weak catalase activity. In addition, there were differences in phenotypic patterns among isolated species during growth at 37 °C under microaerobic and aerobic conditions, in the presence of 2 % (39/41) and 3.5 % (32/41) NaCl and 0.04 % TTC (39/41) and on MacConkey agar (38/41). The results of this study indicated that environmental water samples are common sources for Arcobacter spp. Therefore, effective control measures should be taken to protect human health.
